Paul Brewster
Owner
A long time Glen Ridge resident, Paul’s journey to Fitzgerald’s began in his hometown of Butler, NJ. He held his first job as a dishwasher at Lydecker's Northwood Inn and the rest is history. He left his cozy home and headed to Sin City where he later graduated from UNLV with a degree in hospitality. Paul spent the majority of his career as the Senior Vice President at Compass Group, overseeing national food service accounts for prestigious clients like Prudential, Aetna, the UN, and the Pentagon.
He always dreamt of owning a restaurant and in 2008, he and his business partner Dave Fitzgerald, purchased Joseph's Fine Dining and transformed it into what is now Fitzgerald's 1928. Fitzgerald's has become a staple in Glen Ridge and the neighboring towns. It is a true testament to Paul’s dedication to the community and his passion for bringing people together.
Roy Handler
Executive Chef
Executive Chef Roy Handler is the original chef here at Fitzgerald’s 1928 and rejoined the team in August of 2023. A New Jersey native and Culinary Institute of America graduate, Roy has honed his craft all over the world and brings his unique style and approach into the kitchen.
Don’t be surprised if you see a familiar face walking around the restaurant, Chef Roy has appeared on a handful of cooking shows including Chopped and Chef’s Kitchen Takeover and as a recurring guest on his younger sister’s, Chelsea Handler, comedy series and talk shows over the years.
